With a marinade that goes together in minutes and a brief cook time this is a quick way to have a flavorful meal on a weekday. Serve with Cucumber Yogurt Sauce.
Time: 15 minutes+ marinating time Serves: 4
Ingredients
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 tsp dry rosemary, crumbled
- 2 cloves garlic, crushed
- 4 thick boneless chops (about 1 1/2 inches, may use bone-in)
How to make it
- Combine first 4 ingredients in a bowl, mix well. Place chops in a heavy plastic bag (freezer) and pour marinade over top. Expel air and seal bag. Turn bag around several times to evenly distribute marinade. Place in fridge for 4-24 hours.
- Remove chops and place on broiling pan, reserving marinade. Broil for 12-15 minutes, turning once and basting occasionally with reserved marinade.
