I didn’t get to the farmers market this weekend but luckily they open Tuesdays from July – October so I’ll be heading over there tomorrow. That said, the menu is subject to change (isn’t it always?) but here’s what I’m thinking.
Monday: Pesto Grilled Shrimp with Creamy Quinoa Vegetable Skillet
Tuesday: Roasted Salmon with Greek-Inspired Zucchini Pancakes and Kenzoil Sauteed Green Beans
Wednesday: Thai Basil Chicken Fried Rice and Veggies
Friday: Shrimp Creole
