Tortellini Soup

I know there are many tortellini soup recipes out there, and this is just my version. It goes together so quickly and is so flavorful and filling – perfect for a weeknight dinner.

Time: 15min         Serves: 4


  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 small onion, minced
  • 1 tsp oregano (dried)
  • 1 quart chicken stock
  • 1 15 oz can diced tomatoes
  • salt & black pepper, freshly ground
  • 1 9 oz package tortellini (I used 3 cheese fresh but can use frozen or dry, any variety)
  • 3 cups baby spinach
  • 6-8 basil leaves, roughly chopped or torn
  • parmesan cheese, grated

How to make it

  • Heat the oil in a large pot over medium heat. Add onion and cook until softened & begins to brown a bit. Add garlic, stir and cook for another minute. Add the oregano, tomatoes with liquid, stock, and salt & pepper to taste. Bring to a boil and add the tortellini. Cook according to package instructions. About a minute before they are done, remove pot from heat and stir in spinach and basil. Serve topped with Parmesan.

    This looks great! I love tortellinis… theyre perfect in soup and great for cold pasta salads! great picture!
