Watermelon, Feta & Mint Salad

This salad is so refreshing, unique, and ridiculously delicious!

Time: 10min + chill time                  Serves: 4


  • 3 1/2 cups seedless watermelon cut in 1 1/2 inch chunks or scooped balls (using melon baller)
  • 4 oz. or 1 1/2 cups feta cheese, cut in about 1/2 inch cubes
  • 1 tbsp olive oil shopping list
  • 1 tbsp orange muscat champagne vinegar (Trader Joe’s)
  • 3 tbsp fresh mint leaves, coarsely chopped

How to make it

  • Combine watermelon and feta in a bowl. In a separate bowl, combine olive oil, vinegar, and mint leaves. Mix well. Pour over watermelon & feta. Toss gently to coat. Serve or chill until desired temperature is reached.
