Ramen Cabbage Salad

7 Jul

I had never had a cabbage salad with Ramen noodles but was intrigued by the idea. Most recipes like this say to chill it for a while, but I ate some right away while the noodles were still crunchy and it was good! Good after chilled too, of course.

Time: 15 minutes          Serves: 8-10

  • Dressing

  • 1/4 cup vegetable oil
  • 1/4 cup toasted sesame oil
  • 1/4 cup sugar
  • 6 tbsp vinegar, I used red wine but meant to use rice wine – I was so worried but it tasted great 🙂
  • bunch of fresh chives, snipped
  • Salad

  • 1 16 oz package coleslaw mix or freshly chopped equivalent
  • 2 packages ramen noodles, seasoning packets reserved (I used chicken flavored)
  • sea salt & black pepper, freshly ground
  • 1/2 tsp garlic powder
  • 2 tbsp Gomasio (sesame seeds, seaweed & sea salt) or plain sesame seeds/toasted
  • 2 tbsp almonds, sliced or slivered (toasted if you’d like)
  • 2 navel oranges, peeled and cut into bite size pieces

How to make it

  • Dressing

  • Mix ingredients in a small bowl. Add 1 Ramen seasoning packet. Mix well to combine.
  • Salad

  • Crush Ramen noodles and place in a large bowl with slaw mix, Gomasio, almonds, and oranges. Pour dressing over salad and mix well.
