Lemony Potato Salad

Lemon adds a special zing to this creamy potato salad. Using fingerling potatoes provides buttery texture and a slight sweetness but other potatoes can work here too.

Time: 15 minutes             Serves: 6

Ingredients


  • 1 pound fingerling potatoes
  • sea salt and black pepper, freshly ground – to taste
  • 1/4 cup mayo
  • 1 lemon zested & juiced
  • 3 celery stalks, chopped
  • 1-2 scallions/green onions, sliced
  • *If you want to add fresh herbs, like parsley, feel free! I wanted to but I didn’t have any.

How to make it


  • Place potatoes in a pot of salted water and bring to a boil. Cook until fork tender, about 5-10 minutes. Drain and cool.
  • Meanwhile, combine mayo, juice from half the lemon and about 1 tbsp of zest with salt & pepper to taste.
  • Once potatoes can be handled safely, slice or cut into chunks. Toss with mayo mixture, scallions, and celery. Refrigerate until ready to serve.
