Nutter Betters PB Sandwich Cookies

Delicious peanut butter-y filling between two slightly soft, crunchy peanut butter cookies.

Time: 20 min prep + chill, 10 min cook      Serves: 10


  • Cookie Dough

  • 1/2 cup butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla
  • 1 tsp baking powder
  • 1 egg
  • 3/4 cup white flour (unbleached)
  • 1/2 cup whole wheat flour
  • 1/2 cup crunchy peanut butter
  • Filling

  • 2 oz. cream cheese, softened
  • 1/3 cup smooth peanut butter
  • 1/2 tsp vanilla
  • 1 cup powdered sugar
  • 1 1/2 tbsp milk

How to make it

  • Cookie Dough

  • Cream butter and sugar. Add eggs, vanilla, and peanut butter. In a separate bowl mix flours & baking powder. Slowly add dry ingredients to wet, mixing well to incorporate. Wrap in plastic and refrigerate for at least 3 hours.
  • Preheat oven to 375F. Line baking sheet with parchment paper. Divide cookie dough into 20 equal portions. (You may have to let it sit out for a few minutes until it’s easier to work with.) Roll each section into a ball. Place ball on baking sheet and flatten with your palm. Then use a fork to flatten a bit more. The cookies will not spread much but do leave a bit of room between them. Bake for 10 minutes. Move to rack to cool.
  • Filling

  • Combine all ingredients. Mix well. Once cookies are cooled, spread filling on bottom of one cookie & top with another. Repeat until you have 10 sandwiches.
  • Store in an airtight container.
