Beef Koftas With Minted Yogurt

Inspired by an appetizer I had at a local pub, this is a quick dish that has great flavors and is fun to eat.

Time: 20 minutes          Serves: 4


  • 1 lb ground beef (or half ground lamb)
  • 1 egg
  • 1/2 cup parsley, roughly chopped
  • 1 tbsp mint, roughly chopped
  • 3 green onions, chopped
  • 1/2 tsp cumin (ground)
  • 1/2 tsp smoked paprika
  • sea salt & black pepper, freshly ground – to taste
  • 2 pita breads or flat breads, cut in quarters
  • 1/2 cup plain yogurt
  • 1 tbsp parsley, minced
  • 2-3 tbsp mint, minced

How to make it

  • The kofta kabobs may be broiled or grilled. Preheat whichever you would like to use. I broiled at 450F.
  • Soak wooden skewers in water if using, or use metal.
  • Combine beef, egg, parsley, mint, onion, cumin, paprika, s&p in a bowl. Mix well. Take heaping 2 tbsp of mixture and mold into small sausage shapes. Thread each lengthwise onto skewer. Place skewers on broiler pan and cook about 4 minutes on each side (or until thermometer inserted reads 160F). (If grilling, grill for about 6 minutes on each side or until temp reads the same.)
  • Meanwhile, grill or broil pita bread about 2 minutes on each side until beginning to crisp.
  • Combine yogurt with parsley & mint. Mix well. Serve all together.
