Parmesan Cracker Crusted Tilapia

I found this delicious recipe on the Group Recipes site (posted by user Twilightdawning) and altered it just a bit. Quick, easy and so tasty even those who dislike fish gobble this right up!

Time: 15 minutes         Serves: 4


  • 4 Tilapia fillets, rinsed and patted dry
  • 18 golden round crackers
  • 1/4 cup grated Parmesan cheese
  • 3/4 teaspoon dried basil
  • 2 Tablespoons Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • olive oil spray

How to make it

  • Preheat oven to 425 degrees F. Spray a baking sheet with nonstick cooking spray.
  • Crush Ritz crackers in a small Ziploc bag. Add cheese and basil and shake to combine.
  • Place tilapia on prepared baking sheet. Brush top of each filet with about 1/2 Tablespoon of dijon mustard and season with the salt and pepper.
  • Press the cracker mixture into the mustard coated side of each fillet.
  • Spray liberally with olive oil.
  • Bake for about 15 minutes, or until fish flakes easily.
