Couscous Salad

This salad combines nice textures & flavors and it’s so quick and easy.

Time: 10 minutes                Serves: 6

Ingredients


  • Couscous


  • 1 cup couscous (uncooked)
  • 1 1/4 cup water
  • pinch of salt
  • Dressing


  • 1/4 cup apple cider vinegar
  • 3 tbsp lemon juice
  • 1/4 cup olive oil
  • salt & pepper to taste (sea salt & freshly groundpepper)
  • Salad


  • 1 medium tomato, diced (I used Kumato)
  • 1/4 large english cucumber, diced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh chives, chopped
  • 1/2 cup walnuts, chopped
  • 2 oz. feta cheese

How to make it


  • Couscous


  • Boil water w/salt. Meanwhile, put couscous in a bowl. Once water boils, pour over couscous and cover with a dish towel for 5 minutes. Fluff w/fork.
  • Dressing


  • Combine all ingredients & whisk well to combine.
  • Salad


  • Combine all ingredients in a bowl. Add couscous then pour dressing over all & mix well.
