Champagne Mango Salad

A fresh, flavorful, colorful salad. Champagne mangoes are smaller & just as tasty as the “regular” variety.

Time: 5 minutes             Serves: 2


  • 1 champagne mango, peeled and cubed
  • 1 ripe avocado, peeled and cubed
  • 1 vine tomato, diced
  • 2 green onions, trimmed & chopped
  • several handfuls of baby romaine or other baby greens
  • 2 tbsp olive oil
  • 1 tbsp orange Muscat champagne vinegar (from Trader Joe’s, or similar)
  • black pepper to taste, freshly ground

How to make it

  • Mix oil, vinegar, and pepper well. Combine dressing with other ingredients & toss gently to coat.

    Sweet and nutritious – this salad looks great! I love finding little fruit surprises in my salad! The bursts of sweet flavor and different texture really tie a salad together! Great recipe and Happy Easter!
