Pistachio Pesto Asparagus Tart

2 May

I’ve been wanting to make an asparagus tart for some time and now that Michigan asparagus season is in full swing the timing is perfect. The result was a tasty combo of flavors with impressive results in just 20 minutes.

Time: 5 min prep, 15 min cook                  Serves: 8

  • 1 sheet puff pastry (10″ X 15″ X 1/8″), thawed for 15 minutes (I used Trader Joe’s)
  • 1 bunch asparagus, trimmed
  • 1 tbsp Pistachio Pesto
  • 2 tbsp grated parmesan cheese

How to make it

  • Preheat oven to 425F.
  • Place pastry on parchment lined baking sheet.
  • Spread pesto evenly on pastry, leaving an outer edge of crust plain, creating a very thin layer.
  • Arrange asparagus on top. Sprinkle with cheese, on outer edge too.
  • Bake for 15 minutes.
  • Remove and let set for a few minutes before cutting.
  • *Note: My beau suggested cutting the asparagus into pieces next time, so feel free to try it that way if you want.
