This Week’s Menu

My quest to use up what we have stockpiled in our freezer and pantry is still on. This week should finish it out, leaving us with a totally clean slate for next week. I did buy fresh produce from the farmers’ market to round the meals out. Without further ado, here’s this week’s menu.

Monday – We went to Green Dot Stables for Cheeseburger Sliders and Truffle Herb Fries

Tuesday – Buffalo Turkey Burgers turned out to be lunch. Chicken in Paprika Cream Sauce with Lemon-Thyme Roasted Yukon Gold Potatoes and Roasted Asparagus for dinner.

Wednesday – We ate dinner at another couple’s place. I helped prepare it :-). We had a salad of spinach, tomatoes, seedless cucumbers, and black olives with Asiago Caesar salad dressing to start. The main course was Panko Crusted Chicken Stuffed with Dried Cranberry White Cheddar and Thyme-Butter Rice. 

Thursday – Tilapia Tacos

Friday – Cottage Pie 

Well, it’s already changed quite a bit and it’s only Tuesday. I think it’s looking pretty good, though! The Tilapia Tacos will be a new meal and I’m excited to experiment. My beau is not into eating fish so I don’t do much of it. Hopefully everything is good, but if not there’s always pizza delivery right? 😉
