This Week’s Menu

It’s that time again! Time to piece together a menu for the week. I had a great trip to Sam’s Club to restock our freezer so we have plenty of options. I did get some fruit there as well, discovering a new-to-me variety of peaches: peach pie heirloom peaches. They are delicious and look unique so I’ll probably post of a picture to share in case you haven’t seen them before. The rest of our produce came from Eastern Market and this is what I’m thinking of making to put it all together.

Monday: 17 Bean & Barley Soup with Grilled Veggie Sandwiches

Tuesday: Pizza  with Pepperoni, Bacon & Mushrooms 

Wednesday: Smokey Paprika Roasted Chicken Thighs with Roasted Garlic Red Fingerling Potatoes and Green Beans w/Shallots

Thursday: Spinach and Boursin Stuffed Beef Tenderloin with Garlic Mashed Redskin Potatoes and Garden Salad

Friday: Leftovers!
