This Week’s Menu

This weekend seems to have spilled over into Monday, and I have no complaints about that. My beau was supposed to have an appointment with a dentist at 9:30AM but over the course of the morning, we discovered it might be best if we found a new dentist’s office. Long story…The next available appointment will be at 2PM so we’ve had some unexpected free time. Of course, being me, no surprise we spent some of it doing something involving FOOD. A trip to Trader Joe’s rendered my pantry & fridge complete. My friend gave me A BUNCH of fresh herbs & veggies out of her garden, one I helped choose plants for: opal basil, sweet basil, lemon verbana, pineapple sage, sage, marjoram, pickling cucumbers, poblano & mystery? peppers, collard greens, bok choy, broccoli and broccolini. I think that’s it… What a score! Here’s what I’ll be cooking up in my kitchen this week.

Monday – Teriyaki and Pineapple Sage Roasted Chicken Thighs with Boy Choy and Basmati Rice

Tuesday – We splurged on Fried Shrimp and French Fries while playing trivia.

Wednesday – Cornish Hen with Sage, Marjoram, Basil and Onion, Carrots, Celery, & Potatoes in a Crock Pot

Thursday – Oven Fried Chicken with Baked Mac & Cheese, Collard Greens and Grilled Corn

Friday – Spicy Sausage and Broccoli Pasta

Even though I don’t need much, I’ll be making a trip to Eastern Market tomorrow. What’s on your menu this week?
