Plumcot Cocktail

A refreshing cocktail that can be made using any stone fruit or in a non-alcoholic version. Plumcots a.k.a. Pluots are a cross between plums and apricots.

Time: 5 minutes             Serves: 2


  • 1 plumcot, pitted and cut into chunks (or other stone fruit)
  • 3 oz. vodka or light rum
  • 3 oz. club soda
  • 3 oz. limeade or lemonade
  • 8 mint leaves
  • ice cubes
  • slices of plumcot & mint sprigs for garnish

How to make it

  • Divide fruit chunks and mint leaves into two glasses and muddle. Top with ice cubes.
  • Combine vodka, soda, and lemonade in a martini shaker filled with ice and mix well. Strain and divide between the two glasses and garnish.
