This Week’s Menu

It seems I have been slacking on posting my weekly menus. I’ll try to right that, staring today. Planning the menu for the week is so helpful when it comes to shopping and eliminating wasted food, plus its fun!

Monday – Holiday BBQ: Ribs, hot dogs, burgers, garden salad, potato salad, baked beans, baked mac & cheese, chocolate cake, apple pie and plenty of margaritas.

Tuesday – Panko Parmesan Pork Chops with Peaches ‘n Cream Corn on the Cob and Garden Salad

Wednesday – Roasted Salmon with Quinoa and Sauteed Spinach

Thursday – Pesto Chicken Vegetable Pasta

Friday – Beef Tacos in Soft Shell Corn Tacos

I’ll be making a few other things this week. I’m trying my hand at vegetable stock from veggie scraps today for later use. Zucchini Carrot Muffins will also get baked up sometime this week. What’s cooking in your kitchen?
