This Week’s Menu

How was your weekend? Mine was pretty good. The weather was lovely, sunny, and average 60’sF. I’ve been trying to use up what’s in our freezer and have been doing pretty well with it. I found some great deals on boneless skinless chicken breasts, Swai fillets, tuna steak, and rainbow trout so did some re-stocking. Between rotating the freezer and seasonal produce from Eastern Market, here’s the menu I’ve come up with for the week.

Monday – Salmon Patties with Portabella Cream Sauce with Twisted Baked Potatoes

Tuesday – Grammy’s Chicken Pot Pie  

Wednesday – Thai Turkey Meatloaf with Chinese Green Beans

Thursday – Bistek Tagalog with Basmati 

Friday – Apple Cider Chicken with Braised Winter Squash & Potatoes and Creamed Kale

Saturday – Meatball Sub

I might make up a pot of soup sometime this week, too. I’d love to make one each week through the autumn & winter, does that sound crazy? What’s cooking in your kitchen this week?
