This Week’s Menu

Sorry, I know I’m super late with this post. After all, it is 11PM on Wednesday night. But, better late than never, right?! To say there’s a lot going on would be an understatement. I’m sure if you have access to any media whatsoever you’re aware of the natural disaster known as Sandy that pounded the NE states here in the U.S. My heart and thoughts go out to those who have been affected by this. I think it’s a good time to donate blood (before I lose 5 pounds and render myself ineligible). Without further ado, here’s this week’s menu.

Monday – Beef Tacos

Tuesday – Chicken, Wild Rice, and Veggie Casserole

Wednesday – Butternut Squash Apple Soup with Applewood Smoked Bacon

Thursday – Chicken Parmesan (sort of) with Rice Angel Hair Pasta 

Friday – Faux Pho Noodle Bowl with Vietnamese Chicken Sausage 

I think we’re going out of town next week and I’m not sure if we’ll have a kitchen where we’re staying. So, the frequency of my cooking will depend on that. If I will be able to cook I’ll post a menu. Either way, I’ll be posting recipes while I’m away. What’s cooking in your kitchen? What are you baking?

How was your weekend? Mine was pretty good. The weather was lovely, sunny, and average 60’sF. I’ve been trying to use up what’s in our freezer and have been doing pretty well with it. I found some great deals on boneless skinless chicken breasts, Swai fillets, tuna steak, and rainbow trout so did some re-stocking. Between rotating the freezer and seasonal produce from Eastern Market, here’s the menu I’ve come up with for the week.

Monday – Salmon Patties with Portabella Cream Sauce with Twisted Baked Potatoes

Tuesday – Grammy’s Chicken Pot Pie  

Wednesday – Thai Turkey Meatloaf with Chinese Green Beans

Thursday – Bistek Tagalog with Basmati 

Friday – Apple Cider Chicken with Braised Winter Squash & Potatoes and Creamed Kale

Saturday – Meatball Sub

I might make up a pot of soup sometime this week, too. I’d love to make one each week through the autumn & winter, does that sound crazy? What’s cooking in your kitchen this week?

Back from a whirlwind of traveling and family time. It was wonderful and now I’m alone in my loft which feels strange and comfortable at the same time. Anyway, trying to catch up on some things around the house so I don’t have an exact menu laid out yet but I thought I’d at least get started.

Monday – 17 Bean and Barley Soup

Tuesday – Spaghetti with Tomato Sausage Sauce and Garden Salad

Wednesday – Cornish Hens in Vermouth with Sauteed Zucchini and Roasted Potatoes

Thursday – Tilapia Parmesan with Quinoa and Sauteed Spinach

Friday – Paella with Shrimp and Sausage

Saturday – Asian Potluck Dinner 

Italian Burgers, Broccoli and Cheddar Quiche with Brown Rice Crust,

I’m going to spend Rosh Hashanah, the Jewish New Year, with my family in Milwaukee. The holiday begins Sunday evening but I’m going on Wednesday to spend more quality time with my brother and his new wife. They are coming from Israel and the last time I saw them was when I was there for their wedding at the end of May. I’m really looking forward to that, as well as seeing my dad and sister. My dad gave me the freedom to come up with the menu for the holiday, which has been great fun. I’ll just be cooking dinner here today & tomorrow, but I’ll give you a sneak peak into what we’ll be eating over the weekend and for the holiday at the beginning of next week just in case I don’t get a chance to post while I’m there.


Monday – Roasted Salmon with Quinoa and Sauteed Zucchini

Tuesday – Italian Marinated Chicken, Carrots, and Red Potatoes with Peaches ‘N Cream Corn on the Cob


Friday – Yemenite Chicken Soup and Roasted Beet Salad with Mint

Saturday – Apple Cider Beef Stew

Sunday – Split Pea Soup with Mint with Zucchini Leek Pancakes

Monday – Pomegranate Glazed Chicken with Spicy Moroccan Carrots and Saffron Rice

Tuesday – Sweet and Sour Brisket 

Extras: Apple Cheese Danish, Sweet & Fragrant Honey Cake, and Apple Pie


I offered to prepare some meals for my beau while I’m away but he graciously declined. I think he’s secretly looking forward to fast food and fending for himself 😉 I organized & took inventory of my freezer yesterday so I’m prepared for when I get back. I will need to buy fresh fruits & veggies upon my return and look forward to a trip to Eastern Market then. What’s cooking in your kitchen? Are you transitioning into fall foods?

It seems I have been slacking on posting my weekly menus. I’ll try to right that, staring today. Planning the menu for the week is so helpful when it comes to shopping and eliminating wasted food, plus its fun!

Monday – Holiday BBQ: Ribs, hot dogs, burgers, garden salad, potato salad, baked beans, baked mac & cheese, chocolate cake, apple pie and plenty of margaritas.

Tuesday – Panko Parmesan Pork Chops with Peaches ‘n Cream Corn on the Cob and Garden Salad

Wednesday – Roasted Salmon with Quinoa and Sauteed Spinach

Thursday – Pesto Chicken Vegetable Pasta

Friday – Beef Tacos in Soft Shell Corn Tacos

I’ll be making a few other things this week. I’m trying my hand at vegetable stock from veggie scraps today for later use. Zucchini Carrot Muffins will also get baked up sometime this week. What’s cooking in your kitchen?

This weekend seems to have spilled over into Monday, and I have no complaints about that. My beau was supposed to have an appointment with a dentist at 9:30AM but over the course of the morning, we discovered it might be best if we found a new dentist’s office. Long story…The next available appointment will be at 2PM so we’ve had some unexpected free time. Of course, being me, no surprise we spent some of it doing something involving FOOD. A trip to Trader Joe’s rendered my pantry & fridge complete. My friend gave me A BUNCH of fresh herbs & veggies out of her garden, one I helped choose plants for: opal basil, sweet basil, lemon verbana, pineapple sage, sage, marjoram, pickling cucumbers, poblano & mystery? peppers, collard greens, bok choy, broccoli and broccolini. I think that’s it… What a score! Here’s what I’ll be cooking up in my kitchen this week.

Monday – Teriyaki and Pineapple Sage Roasted Chicken Thighs with Boy Choy and Basmati Rice

Tuesday – We splurged on Fried Shrimp and French Fries while playing trivia.

Wednesday – Cornish Hen with Sage, Marjoram, Basil and Onion, Carrots, Celery, & Potatoes in a Crock Pot

Thursday – Oven Fried Chicken with Baked Mac & Cheese, Collard Greens and Grilled Corn

Friday – Spicy Sausage and Broccoli Pasta

Even though I don’t need much, I’ll be making a trip to Eastern Market tomorrow. What’s on your menu this week?

As much as I love cooking and trying new things, I haven’t felt as inspired as I do most of the time. I’m trying to combat it by going back to some easy, tried and true recipes with a few new ideas throw in the mix.

Monday – Pizza with Garden Salad

Tuesday – Quinoa and Kale Crustless Quiche with Garden Salad

Wednesday – Shrimp & Parmesan Grits with Garden Salad

Thursday –  Inner Cheese Burgers on Homemade Burger Buns with 

Friday – T.B.D.

I didn’t get to the farmers market this weekend but luckily they open Tuesdays from July – October so I’ll be heading over there tomorrow. That said, the menu is subject to change (isn’t it always?) but here’s what I’m thinking.

Monday: Pesto Grilled Shrimp with Creamy Quinoa Vegetable Skillet

Tuesday: Roasted Salmon with Greek-Inspired Zucchini Pancakes and Kenzoil Sauteed Green Beans

Wednesday: Thai Basil Chicken Fried Rice and Veggies

Thursday: T.B.D.

Friday: Shrimp Creole

It’s that time again! Time to piece together a menu for the week. I had a great trip to Sam’s Club to restock our freezer so we have plenty of options. I did get some fruit there as well, discovering a new-to-me variety of peaches: peach pie heirloom peaches. They are delicious and look unique so I’ll probably post of a picture to share in case you haven’t seen them before. The rest of our produce came from Eastern Market and this is what I’m thinking of making to put it all together.

Monday: 17 Bean & Barley Soup with Grilled Veggie Sandwiches

Tuesday: Pizza  with Pepperoni, Bacon & Mushrooms 

Wednesday: Smokey Paprika Roasted Chicken Thighs with Roasted Garlic Red Fingerling Potatoes and Green Beans w/Shallots

Thursday: Spinach and Boursin Stuffed Beef Tenderloin with Garlic Mashed Redskin Potatoes and Garden Salad

Friday: Leftovers!

I let the farmers market inspire me again this week, and I think that’s a great way to build a menu on what’s fresh and in season. Usually I do more planning but I’m flexible 🙂 Here’s what I came up with. Sorry I’m late, but better late than never.. right?

Monday – Portabella Burgers with Green Bean “Fries” and Horseradish Dipping Sauce

Tuesday – Grecian Goddess Pork Chops and Zucchini Risotto with Garden Salad

Wednesday – Whole Wheat Spaghetti with Meatballs & Marinara

Thursday – Potato Parmesan Crusted Tilapia with Roasted Carrots and Quinoa
